Principles of HACCP

This course sets you up as a HACCP practitioner and provides very practical ways of implementing HACCP, prerequisite programs and risk management. This course is a requirement for HACCP team leads and is the gold standard for HACCP training.

Course Outline

The Principles of HACCP Course covers the following topics as well as others;

  • Food safety and food quality
  • The content of Food Safety Programs
  • Development of pre-requisite programs
    Food safety hazards
  • How to develop HACCP plans based on the international Codex Guidelines

Achievements

National Competencies achieved on successful completion:

-FBPFSY2002 Apply Food Safety Procedures

– FBPFSY3002 Participate in a HACCP Team

– FBPFSY3003 Monitor Implementation of Food Safety Programs

Assessment will be based on:

  1. Brief CV demonstrating appropriate food industry experience and/or qualifications
  2. In-class demonstration of competency via formal assessment
  3. Job-relevant workplace project (you will require access to a workplace).

Learning Outcomes

Upon completion of this training course, participants should:

  • Aware of the regulatory environment in the food industry
  • Able to identify typical food safety hazards
  • Know the components of a Food Safety Program
  • Know how to develop a HACCP Plan using the Codex guidelines

Prerequisites

You are required to have an understanding of the sources of food hazards, in particular, food microbiology. This can be demonstrated through your workplace, previous study or any other relevant source. We will use our discretion to assess who is appropriate to undertake this course. We will work with you though! In the worst case, undertaking a food microbiology course beforehand may be required.

HACCP Foundation for HARPS

This course has been specially tailored for HACCP management in the produce industry. This course has been designed to meet the requirements of section 4.1 of the HARPS Standard.

Course Outline

This HACCP course is required for HARPS Practitioners under element 4.1 of the HARPS Standard. This course has been specially tailored for HACCP management in the produce industry. This is the course required under the HARPS standard for initial HACCP training. This is your starting point. After this, you will be required to complete a HACCP Refresher every 3 years.

National Competency achieved on successful completion of assessment: FBPFSY3002 Participate in a HACCP Team & FBPFSY2002 Apply the Food Safety Procedures.

This course is designed for HARPS practitioners and provides an introduction to HACCP and Food Safety Requirements.

Upon completion of this training course, participants should be:

  • Aware of the regulatory environment in the food industry
  • Able to identify typical food safety hazards
  • Comfortable in recognising the components of a Food Safety Program
  • Confident in the role of HACCP in the development of a Food Safety Program

HACCP Refresher

This course brings you up to date with current thinking and practices in HACCP, food safety and risk management. The HACCP Refresher covers the CODEX HACCP revision 2020 changes in a specific module. On successful completion, you will be issued with the competency.

This course satisfies the HACCP Refresher training requirements for Woolworths Supplier Excellence, Coles/CFSMR, SQF and BRC.

Course Outline

This course brings you up to date with current thinking and practices in HACCP, food safety and risk management. The course will also brief you on the latest updates in the food industry including Food Safety Culture and how Food Fraud & Food Defence Systems link to your HACCP system.

Assessment will be based on:

  1. Brief CV demonstrating appropriate food industry experience and/or qualifications
  2. Evidence of student having HACCP responsibilities
  3. Copy of most recent HACCP training covering FBPFSY3002 or equivalent
  4. In-class demonstration of competency via formal assessment.

This course is designed as a refresher and update for those who have already completed Principles of HACCP or equivalent.

This course is accredited and leads to the units of competency as outlined in the Achievement section.
As an accredited course, this course contains assessment requirements. The course contains a series of in-class assessment activities designed to reinforce the key skills and knowledge outcomes and also has a post-course assessment requirement.
You can find a copy of the terms and conditions as well as a copy of the Student Handbook. The student handbook is a comprehensive summary of student rights and obligations.
Your Statement of Attendance will be sent to you on completion of the course. If the course has a Statement or a Certificate of Attainment you will be emailed this as a pdf on successful completion of all course assessment requirements. This will take up to 28 days once attainment of the relevant units of competency is confirmed by the assessor.
