Course Outline
- This course gives you a HARPS overview and general requirements
- Food safety and quality issues in the produce industry
- Legal requirements for food safety programs
- Four hazards (biological, chemical, physical, allergen) and their sources
- Three elements of a food safety program (facilities and equipment, HACCP and prerequisite programs)
- Food safety risk assessment and HACCP process; and
- HARPS elements in practice
Achievements
Upon successful completion of the assessment, a certificate of completion will be awarded. This is an official HARPS Certificate, issued by HARPS Australia.

Upon completion of this training course, participants should:
- Have a full understanding of the four hazards (biological, chemical, physical, allergen) and their sources
- HARPS elements in practice
- Know the principles of Codex HACCP
- Able to identify typical food safety hazards
- Know the required Pre-requisite Programs
- Know what a good food safety culture looks like
